Veggie Toad in the Hole (ish)
This was tonights supper
Roast a bunch of veg (I used parsnip, carrot, leek and an orange pepper) for about 30 minutes. While they're roasting, make the yorkie batter: 3oz plain flour 1 egg 3 fl oz milk 2 fl oz water
Sieve flour into a bowl and make a well in the middle break egg into well, and begin to whisk in flour add milk and water and keep whisking until you have a smooth batter.
Cut a bit of mozzarella into chunks
Whack heat up on the oven for a couple of minutes (200o) Take out roasting dish, drop the mozarella on the veggies, pour the batter over the lot and pop back in the oven for about 20 minutes.
Serve with gravy
Yummy.

And the leftovers are great with a bit of chilli jam It would work well with slices of halloumi instead of mozzarella too, I think.
